How to prepare Ensalada Malagueña?
1. Wash three medium-sized potatoes and cut them into small pieces. Afterward, put them into a pot and add just enough water to cover them.
2. Cook the potatoes over high heat and add a tablespoon of sea salt when the water starts boiling.
3. Hard boil two eggs.
4. While the potatoes are cooking, cut half a green onion and half an orange into small pieces.
5. Once the potatoes are cooked, add them for a few minutes into cold water to stop the cooking process. Afterward, add them into a big bowl.
6. Cut the hard-boiled eggs into small pieces and add them together with the diced onion, the orange pieces, and a pinch of sea salt to the bowl with the potatoes.
7. Cut one tomato into bite-sized pieces and chop the parsley. Add both to the bowl.
8. Add extra virgin olive oil and mix everything.
How to serve Ensalada Malagueña?
