Easy Spanish cream of broccoli soup recipe with only six ingredients.
How to make Broccoli soup?
1. Heat extra virgin olive oil in a pot over medium heat and add one thinly chopped medium-sized onion. Fry for around five to ten minutes until the onion starts to golden.
2. Cut the broccoli into small pieces and remove part of the stem. Add the broccoli and six cups of chicken broth to the pot. Let it cook for around ten minutes.
3. Add half a cup (around 100 ml) of evaporated milk, salt & pepper. Afterward, mix everything well with a stick blender. If the soup is very thick once you have mixed it, add a bit more chicken broth and mix again.
